Ripen mangoes are sweet, tasty, cool, soft, strength provider, heavy, healthy, destroyer of kapha( specially ) ,pitta and vaata doshas, increased digestive fire , tissue nourishment, semen enhancer, having a clear bowl movement etc. It removes thirst, heat, tiredness and loss of appetite , balances vaata, kapha and pitta doshas , enhances body fat, and helps in urine formation. The whole part of the this trees are helpful for humans. The biological name is Mangifera indica.

HOW TO MAKE RIPE MANGOES?
Harvest fruits from the tree. It should be kept in dry grasses. The artificial heat helps the fruits to ripe and this process ripening is very nutritious .The ripen fruits are healthy tonic in summer.
Some drops of ghee in the juice of the fruit helps in increasing digestive fire, provides strength and healing wounds etc.
Unripe fruits are also very healthy but when it is consumed with cumin and black salt . Example – Panna.
The Aam panna has a refreshing and cooling effect on the body. It helps in tackling heat stroke/ sun stroke in the summer.
The unripe fruits are also used in preparing pickles such as sikkul.
There are different varieties of mangoes in Bharat.
Example – Malda , Himsagar ,Langda , dudhiya Malda, dashehari etc.
Malda ( west Bengal ) is known as the mango city of Bharat.
THE UNRIPE MANGOES:-
1 . These are sour and sharp in taste.
2 . Sometimes it causes problems in the body
3 . The unripe fruits are eaten with black salt, cumin, or jaggery.
4 . Indigenous fruits are better than grafted.
5 . Only ripen fruits with milk helps in fighting leprosy.
RESTRICT FOODS WITH MANGOES ARE:-
1 . Do not eat sour fruits with milk because it creates restrictions in blood formationÂ
2 . Acidity
3 . Artificial juice of it should be avoidedÂ
4 . Stale juice should be avoided.
5 . We should not drinking water after eating mangoes.
6 . The unripe fruit with honey /milk combination should be avoided for those who have cough and respiratory problems.
But the ripen fruits with honey combination is helpful for spleen, Tuberculosis and respiratory problems.
TYPES OF MANGOES WHICH IS GOOD FOR HEALTH ARE HAVING THE CHARACTERS SUCH AS:-
1 .outer peel should be thin
2 . The seeds should be small in size
3 . More pulp
4 . Fibres should be absent
These types of fruits are nutritious and help in muscle development and seven dhatus.
5 . The Amaawat/ Aaampapad ( prepared from ripened juice of mango) handles vomiting, thirst and removes pitta doshas.
There are thousands of varieties of mangoes found in whole Bharat. Some of the varieties are also have GI tags and some of the varieties are also attached to the sentiments of the different states. Here I have researched on some varieties of the different states .
Bihar – Dudhiya Malda, sinduri ,Gulab khas Fazli ,Chausa , Kakatiya , Jardalu ( It can be eaten even by the diabetic people).
Sipia and sikkul are the varieties for pickles.
