METHI PAAK
In our daily foods vegetables are most nutritious. Because of the chlorophyll present in it ,it destroys germs and prevents teeth and makes gums strong. Vegetables have rich amounts of Iron in it which prevents blood problems such as Anaemia and tackles body weakness. The alkali present in vegetables neutralizes the acid in the blood. In hindi Fenugreek is called methi or methi saak. Methi saak is used in every part of Bharat. It can also be sun dry and dry Fenugreek leaves are also used in many vegetables and curries ,culinary, seasoning, tempering or tadka etc.
PRODUCTION:-
It is produced in all months but specially in the winter season (from November to the end of March ). It is produced in other countries such as Pakistan etc.
The leaves are pungent and slightly bitter in taste but the soft leaves of Fenugreek are less bitter in taste.
NATURE OF FENUGREEK:-
1 . Sharp ,hot , pungent, slightly bitter, pitta aggravating/ provoking , easily digestable, hunger increasing, removes Constipation,Heart friendly , strengthening and power promoter etc.
2 . Fenugreek leaves are more beneficial than seeds. The leaves are helpful in digestion, pregnant ladies, vaayu doshas ( respiratory problems), and Kaph doshas.
3 . Helpful in fever , vomiting, cough , loss of appetite or aversion to foods ,vaata doshas (eg.gout), piles, worms problems, Tuberculosis etc.
4 . It is healthy and a blood purifier
5 . Colic or abdominal pain, abdominal gas or bloating , Osteoarthritis ,back pain ,body pain, heart problems and handles low blood pressure etc.
6 . Increases milk production in lactating women.
7 . Removes abnormal digestive problems and makes the body healthy.

AYURVEDIC USES OF FENUGREEK:–
1 . Removes kapha doshas and constipation. They should eat methi saak daily but in a limited amount.
2 . Eating daily methi saak is helpful in kapha and vaayu doshas and piles problems.
3 . For Excessive urine or polyuria problems – black cutch(kattha ½ gram) + thread mishri(3 gram) in methi leaves juice (100 ml) = daily
4 . In diabetes, the juice of methi leaves (100ml) can be taken daily in the morning and if someone has more diabetes can be taken two times a day with the same quantity.
The patient should also avoid sugar, chappathi, rice and ghees etc.
5 . For Low blood pressure – can be taken methi saak with ginger and little amount of garam masala in it.
6 . Worms in stomach – one to two spoons of methi leaves juice can be given to the children daily for worms in the stomach.
7 . For abdominal gas pain – dry / fresh leaves of Fenugreek can be taken daily. 80% of the problems will be gone.
8 . Amebiasis – Fenugreek leaves (50gm) + thread mishri (6gm)
Another remedy is to mix 5 grams of Fenugreek powder in 100 grams of curd. The curd should be fresh, not sour.
Can be taken daily.
9 . Sunstoke in summer- the dry leaves of Fenugreek should be soaked in water . Rub the soaked methi in water properly. Sieve the water .The honey should be mixed with that water and can be taken in sunstroke.
Can be taken only a day.
PROCESS OF MAKING FENUGREEK PAAK / METHI PAAK OR METHI LADDU.
1 . It is the traditional dish or sweet of Gujarat.
2 . Take 100 gm of Fenugreek seeds and finely grind it in powder.
Sieve the Fenugreek. Removes the coarser particle of it.
3 . The powder should be mixed with milk and soaked for half an hour because milk will neutralize the bitterness of the methi powder.
4 . The soaked methi should be fried in pure ghee unless the aroma comes out.
5 . The gond and wheat flour can also be taken in small amounts . All these should be fried in ghee.
6 . Melt some jaggery according to taste. All the ingredients should be mixed together. The dry fruits can be used in it according to the choice.
Spread in a plate by applying ghee in it. Or if it bind in round shape becomes methi laddu.
7 . Important ingredient is long pepper ,dry ginger, carrom seeds ,cumin, chitrak ,bay leaves, coriander,nigella seeds, fennel seeds, cinnamon powder, Nutmeg and nagarmotha (nut sedge).
Following ingredients can be taken in small amounts. Addition of these ingredients will increase the Nutritious values and tastes and shelf life.
